MICHELIN is presenting the new edition of the MICHELIN Guide Germany. Even though the Coronavirus pandemic is not yet over and done with, the Restaurant selection for 2022 confirms the diverse offer and unaltered high quality of German gastronomy, despite the harsher conditions. An expression of this remarkable development is the record number of restaurants being awarded Stars, bringing the total to 326, including one new three-Star restaurant, eight new two-Star restaurants and 31 new restaurants with one Star.
One new three-Star restaurant
As a real highlight, the MICHELIN Guide Germany is this year posting a new entry, bringing the total of three-Star restaurants to nine. The schanz. restaurant. in Piesport, which had already been awarded two MICHELIN Stars, has this year climbed to the peak of German gastronomy. The inspectors were of one opinion : that the cuisine here is absolutely world class. The owner and chef Thomas Schanz creates dishes that are rich in finesse, personality, and expression. For that reason, the restaurant in the Rhineland-Palatinate wine-producing municipality of Piesport and its modern-classic cuisine now holds a third MICHELIN Star - a tremendous achievement ! Eight restaurants awarded two MICHELIN Stars
Another marvel is the considerable number of restaurants that have joined this year’s selection of two-Star restaurants, with eight new additions. The following Restaurants are new to the MICHELIN Guide Germany list and have been directly awarded two Stars : ES:SENZ in Grassau, etz in Nuremberg and three restaurants in Munich : Tohru in der Schreiberei, Atelier and Tantris. These last two are also special cases. Both restaurants have reopened after temporary closures. At Atelier, the kitchens have been taken over by Anton Gschwendtner, who was previously the chef at the Two-Star “OLIVO” in Stuttgart. And also, Tantris – where cooking legends have been working for decades – is celebrating its comeback with a new kitchen team under Benjamin Chmura and Matthias Hahn. The restaurants 100/200 Kitchen in Hamburg, LOUIS Restaurant in Saarlouis and the Speisemeisterei in Stuttgart, which had already been awarded one Star, saw their accomplishments increased to two MICHELIN Stars.31 new one-Star restaurants
With 31 new restaurants awarded one Star, this year’s German edition reaches a record number of 272 one-Star restaurants ! In Frankfurt am Main, two new restaurants were awarded one Star : Masa Japanese Cuisine and MAIN TOWER Restaurant & Lounge. Hamburg also has two new one-Star restaurants with Jellyfish and Zeik, as has Hannover with Handwerk and Votum. Munich earned a specific mention : In addition to the Mountain Hub Gourmet, the MICHELIN Guide also awarded both newly listed restaurants Werneckhof Sigi Schelling and Tantris DNA with one Star. The latter is under the same roof as the new two-Star restaurant, Tantris. As an ensemble, both were also named in the MICHELIN Guide as the “New Opening of the Year”.18 new “Bib Gourmand” restaurants
The “Bib Gourmand”, an award for the best price-quality ratio, is still meeting with great interest – from restaurateurs and guests alike. For the 2022 edition, the MICHELIN inspectors thoroughly investigated and found 18 new restaurants offering impressive, good food at moderate prices and thus earning the quality label. In total, the MICHELIN Guide lists 297 “Bib Gourmand” restaurants this year.Eleven new “Green Stars” for environmentally friendly gastronomy
A total number of 61 restaurants are awarded a MICHELIN Green Star in the 2022 edition, once again validating the huge significance of sustainability in gastronomy. Since the introduction of this award in the MICHELIN Guide Germany 2020, there has been a steady increase in the number of MICHELIN Green Star restaurants, which distinguish themselves through environmentally- and resource-friendly management. This year sees the addition of eleven new establishments, where the chefs have committed themselves to environmentally friendly gastronomy. In addition to the practices implemented in their restaurants, the initiative looks to the use of regional and seasonal products, the consideration of sustainable aspects, short transport circuits, the farming of animals in their natural environments, energy savings, and waste prevention, as well as raising awareness and educating employees with a view to a climate-friendly working procedure. With concrete measures like these, the sector illustrates how important sustainability is for future-orientated gastronomy.MICHELIN Guide selects two Award Winners
This year, the MICHELIN Guide is presenting two awards: for the “Mentor Chef” and the “New Opening of the Year”. Johannes King from Söl'ring Hof on Sylt was named as the “Mentor Chef”. The former owner of the two-Star restaurant in Rantum has since handed management of the restaurant over to his chef Jan-Philipp Berner. Over the years, King has transmitted his know-how and knowledge to numerous chefs and thus passed this on to the next generation of head chefs. The prize was awarded in partnership with Blancpain. The “New Opening of the Year” award goes to the Munich restaurant ensemble Tantris and Tantris DNA. On its reopening, the veritable cult address brought together Tantris, which has simultaneously been awarded two MICHELIN Stars, and Tantris DNA, which also holds a new Star.
