4 New Green Stars for The Nordic Countries 2024

Find out which restaurants in Denmark, Finland, Iceland, Norway and Sweden have been awarded a Michelin Green Star for their sustainable practices

We are delighted to announce that in The MICHELIN Guide Nordic Countries 2024, 4 restaurants have been newly awarded a Michelin Green Star. This takes the total number of Green Stars in the Nordic Countries to 36. This distinction was introduced in 2021 to highlight restaurants at the forefront of the industry when it comes to their sustainable practices. These establishments offer dining experiences that combine culinary excellence with outstanding eco-friendly commitments. They are a source of inspiration both for keen foodies and the hospitality community as a whole.

Every Green Star restaurant is different and works in its own unique way – but all make a difference to the world around them and act as role models to us all. Many work directly with growers, farmers and fishermen; forage in hedgerows and woodlands; grow plants and rear animals; and use regenerative methods such as no-dig vegetable gardens and successional cover crop growing. They also often go beyond environmental considerations to address issues related to ethics and wellbeing, as well as contributing to local, national or global charitable and educational projects.

There is no specific formula for awarding a Michelin Green Star, as every restaurant and its surrounding region has a unique set of conditions. The Michelin Inspectors are simply looking for those making huge efforts when it comes to their sustainable practices. They consider things such as: the provenance of the ingredients; the use of seasonal produce; the restaurant’s environmental footprint; food waste systems; general waste disposal and recycling; resource management; and the communication between the team and the guests about the restaurant’s sustainable approach.

The following places have demonstrated the qualities of a Green Star in abundance, and we are pleased to welcome them to our family of sustainable restaurants.

New Green Star Restaurants in Denmark

Alimentum, Aalborg

Going straight into The MICHELIN Guide with a Green Star, 2024 is proving to be a great year for the team at Alimentum. Their award for sustainable gastronomy is thoroughly deserved, given the close ties the kitchen has with their farm, Lille Østergaard. The cooking is in constant dialogue with the land, working with what seasonal produce is available and preserving several ingredients for the winter. Lille Østergaard is home to 10 hectares of different crops, along with pigs and poultry; even the honey comes from the farm. Any other ingredients are organic and sustainably sourced from local producers.

Tri, Agger

Already holding One Michelin Star, Tri has added to its haul this year with a Green Star for the team’s commitment to eco-friendly gastronomy. As with many Green Stars, the menu here is dictated by the seasons and what is available, while 98% of the ingredients come from local producers too. In addition to this, a nose-to-tail ethos is adopted when cooking with meat and fish, so that the whole animal is used and there’s as little wastage as possible. The sustainable approach extends beyond the food and into the wine list too, which only includes organic and biodynamic choices.

New Green Star Restaurant in Finland

Nokka, Helsinki

Nokka is one of those restaurants that really feels like a Green Star. The service team do a wonderful job of explaining the kitchen’s sustainable ethos and the origins of the organic seasonal produce used in the cooking. Beyond this, there’s a clear no-waste approach running throughout their practices: leftover wines are used to make in-house vinegar; oil collected from the kitchen is sent to one of their vegetable suppliers to heat its greenhouses; and several ingredients are pickled or fermented to both avoid waste and add an extra flavour dimension to some of the dishes.

Kontrast, Oslo

In yet more good news for newly crowned Two Michelin Star restaurant Kontrast, the team here have been awarded a Green Star for ensuring that their cooking is not just delicious but sustainable too. Fermented products are a key part of this, with potential food waste instead channelled into garums, shoyu, vinegars and more. Chef-Owner Mikael Svensson even has his own company, b.culture, dedicated to their production. Leftovers that cannot be preserved are used as compost, and the team even tend to a rooftop garden filled with bee-friendly flowers that support the city’s pollinators.
