MICHELIN Guide’s Point Of View

Three friends have come together to create this pioneering restaurant. Their mantra is ‘waste not, want not’ and their ethos is based around using imperfect produce and items which would normally be discarded. Ingredients are used in multiple different ways in the skilfully prepared, multi-course menu.
