MICHELIN Guide’s Point Of View

Run by a group of friends, this restaurant’s ersatz industrial feel comes from a concrete floor, stark white décor and a glass-fronted fridge of hanging meats. The menu focuses on organic produce in dishes that are earthy and natural. Their ingredient options initially made them think more about sustainability, which now underpins all their actions.

Life centres around gaining knowledge, so sustainability is really just about education and learning. We are sustainable in all that we do, even down to our choice of bank; we want to know that the money they look after is being used in a good way.
