MICHELIN Guide’s Point Of View

An ecologically friendly restaurant in the hamlet of Friland; the focus is on sustainability so furniture is made locally from natural wood and produce comes from its own permaculture garden or local suppliers; they also aim for zero waste. The well-priced vegetable and plant based dishes are full of flavour.

The chef's commitment
We work mindfully and aim for zero waste, as we can only improve our ecosystem if we reduce what we discard. We believe that humans can work in a constructive partnership with nature and we collaborate with Danish scientists to formulate guidelines for the future.
