MICHELIN Guide’s Point Of View

Take in water and city views from the top floor of this former warehouse; now a well-known photography museum. The straightforward, largely plant-based menu is supplemented in the evening by fish from the aquaponics farm in the basement, which is fed by their on-site composting system.

We make plants the star of the show, using all of the parts and throwing nothing away. We also practise circular thinking, with a focus on composting, hydroponics, and upcycling; turning potential waste into something useful and often beautiful.
