Since the launch of the MICHELIN Guide Singapore 2021 in September of last year, our inspectors have been out and about in search for new addresses worthy of a place in the MICHELIN Guide selection.
While the MICHELIN Guide distinctions — Stars, Bib Gourmands, and Green Stars — will be revealed during the annual launch ceremony, our MICHELIN Guide inspectors have decided to share some fresh new restaurants that have caught their eyes (and tastebuds), making them new additions to the next MICHELIN Guide Singapore selection.
Every third Wednesday of the month, the new restaurants that will be part of the upcoming MICHELIN Guide Singapore will be featured in both the MICHELIN Guide Singapore website and the MICHELIN Guide mobile application.
How to spot the new restaurants? They will be highlighted with a "New" symbol. Some of these newly recommended establishments will go on to earn distinctions at the MICHELIN Star Revelation ceremony, so check them out and add them to your list of places to dine at!
Here are eight of the MICHELIN inspectors' favourite new additions for May 2022 in Singapore!
Claudine
39C Harding Road, Singapore 249541From chef Julien Royer of three-MICHELIN-Starred Odette fame comes a classic French brasserie, which he named after his mother. It’s housed in a lovely 1930s converted chapel, with an open kitchen at one end and a bar at the other. Those with a fondness for comforting French classics will find the roll-call of favourites very appealing, from onion soup to vol-au-vent and baba au rhum. If you’re willing to share then go for the bouillabaisse or the pepper steak flambéed at your table.
Hai Nan Xing Zhou Beef Noodles
22 Lor 7 Toa Payoh, #01-06 Kim Keat Palm Market & Food Centre, Singapore 310019Situated in Kim Keat Palm Market & Food Centre, this stall specialises in beef noodles. Choose between blanched rice noodles tossed in a thick gravy, or soup noodles in a deeply flavourful ox bone broth. Then top with sliced beef, beef tripe, tendon, beef balls, or a combination.
Hamamoto
58 Tras Street, Singapore 078997Sourcing the finest ingredients is something of an obsession for Kyoto-born Kazuhiro Hamamoto. And it’s not just his nigiri, whether nodoguro or chutoro, that shows his care and craftsmanship – the dishes served before it, like spiny lobster with uni, or smoked meji-makuro, prove just as memorable. There is only one sitting at lunch and dinner at the handsome, curved counter, so you’ll need patience and perseverance when trying to secure a booking.
Lixin Teochew Fishball
22 Lor 7 Toa Payoh, #01-20 Kim Keat Palm Market & Food Centre, Singapore 310019Also located in Kim Keat Palm Market & Food Centre, the owner makes the fishballs by hand to ensure they are springy and bursting with umami. Blanched noodles tossed in chilli sauce with crispy cracklings are the perfect companion to the fish ball soup.
Marguerite
18 Marina Gardens Drive, #01-09 Flower Dome, Singapore 018953Dining in the Flower Dome makes for a back-to-nature moment, and Chef Wilson does it with a touch of class. In his tasting menu, gracefully presented courses are underpinned by solid techniques, packed with oomph and flavours bold enough to match the showy, colourful blooms. The wine list showcases some rare labels, including bottles from Lebanon and Morocco, while the temperance pairing is also interesting. Service is seamless and personable.
Nae:um
161 Telok Ayer Street, Singapore 068615The bright room is furnished in a cream and birch colour scheme, imparting calmness and warmth. The Korean chef Louis Han named his restaurant Nae:um, meaning a fragrance that evokes memories. Food culture and recollections of his home country are at the core of his episodic menu that changes with seasons. Innovative courses are precisely executed and presented in an ethereal, refreshing manner, but have inklings of their Korean roots.
Osteria BBR by Alain Ducasse
1 Beach Road, Singapore 189673The iconic Bar & Billiard Room (BBR) in Raffles Hotel Singapore is now home to Chef Alain Ducasse’s dining concept with an Italian Riviera theme. The open kitchen at the centre of the bright and airy room is surrounded by counter seats, perfect for those who want to stay close to the action. Start your meal with an Italian-inspired cocktail and order pasta or fish for the main course, or try the curated Menu Tentazioni for the entire table. Book a stay at Raffles Hotel Singapore here.
Sing Lung HK Cheong Fun
1 Beach Road, Singapore 190001The chef has years of experience in Cantonese cooking and his velvety Hong Kong-style rice noodle rolls are made to order. Come early for the century egg and pork congee or glutinous rice, as they tend to run out early.
