MICHELIN Guide’s Point Of View

Buzzy and beloved since day one, Chef Andrew Carmellini’s The Dutch quickly became a major hit and SoHo institution. Its primo corner windows open on to the sidewalk, tempting guests inside with a stocked oyster bar, cozy banquettes and sharply dressed service staff. The menu is just as seductive as the space, familiar but with fresh updates.
Highlights include "Chinatown Calamari," featuring deep-fried rings, golden and crispy, dressed with a salad of diced cucumber enhanced with fresh herbs and a spicy vinaigrette. Fresh pasta ravioli then arrives filled with subtly smoked ricotta set over a simple yet bright pomodoro sauce. Grilled snapper composed with avocado salsa and charred shishitos is best bolstered by a side of their excellent shoestring fries.
Commitment to sustainable gastronomy
Initiatives
Chef Carmellini has built long-term relationships with growers through the Union Square Greenmarket and partnered with local eco-health programs like Dock to Dish.
