Every month MICHELIN Guide Inspectors reveal details of new restaurants to be featured in MICHELIN Guide Thailand, ahead of the yearly launch ceremony when the MICHELIN Stars, Bib Gourmands and Green Stars are unveiled.
Restaurants in Bangkok, Ayutthaya, Chiang Mai, Phuket and Phang-Nga will be added to the selection monthly, on the second Wednesday of every month. The newly selected venues will feature on both the website and the app. There’s a special entry “New” created for those newly-listed restaurants for easy identification. Why not give them a try and see which ones you would add to your shortlist?
For August, we are pleased to share four more of the inspectors' favourite new additions...
Resonance, Bangkok
At Resonance, Chef Shunsuke Shimomura takes diners on a journey through his past, weaving dishes from his experience working around the world into his seasonal tasting menu. Open for dinner only, the restaurant fills the ground floor of a contemporary two-storey house. The minimalist interior puts the focus on the food, as do the friendly servers. To add another layer of subtlety to your meal, ask for the tea pairing a day or two in advance.
O Pochana, Ayutthaya
This rickety but charming little wooden house that backs onto the River Noi is the perfect local pitstop. Their Thai menu is prepared in an open kitchen with a charcoal stove, mostly comprising local fish and river prawns, caught just behind the restaurant – as fresh as it can be. The wok produces a wonderful charcoal flavour in the stir-fried salt and pepper river prawns. Meanwhile, the deep-fried sheatfish with sweet fish sauce is succulent, with a crispy texture.
Pa Pu Boat Noodles, Ayutthaya
Octogenarian Pa Pu is the talent behind the recipes in this simple shop next to the local rice field. The signature boat noodles with shredded chicken or pork and soft eggs are a delicacy. There’s no need to add any condiments; Pa Pu produces the perfect blend of flavours every time.
Samut, Phuket
Samut (or ocean) is set in a traditional Thai-Chinese building decorated in an Oriental style, with dark teak wood. Previously the lobby of the adjacent hotel, it’s now a gastronomic destination. The set menu, with more than 10 dishes, tours the island’s coastline, offering seafood caught by local fishermen. The chef respects the traditions of the island, selecting flavours and fruits inspired by local creativity, including a reinterpretation of Phuket dim sum.
