MICHELIN Guide’s Point Of View

Welcome to a realm of understated elegance at this ground-floor restaurant of The Dominick hotel in Hudson Square. Vestry is a foolproof destination for guests craving a quiet evening in an intimate setting that fortunately also prepares truly gratifying cuisine. In terms of décor, envision handsome herringbone-laid plank floors, luxe leather seats, and billowing fabric-draped windows. Then throw in a pop of greenery by way of potted plants for a happy marriage between exotica and earthiness.

The bar is a gleaming perch, not unlike the dining room, which offers a seafood- and vegetable-focused menu, replete with global inflections. Steering this kitchen's reigns is chef extraordinaire, Shaun Hergatt, so diners can expect nothing less than food art. The shiitake handroll employs wasabi leaf instead of nori and makes for a cool, natural, and zesty bite. Pescatarians will exult in the salt-cured ocean trout paired with nashi pear for a sweet and savory affair; or black seabream seared to golden crisp before being enriched by a spiced yuzu-kosho sauce.

Close on the heels of these savory treats is a finale of Tahitian vanilla-and-star anise semifreddo, cloaked by deep-purple mountain huckleberries.
