The MICHELIN Guide Thailand, in collaboration with ThaiBev Company Limited, takes you on a journey to Ko Pu in Krabi Province, led by the innovative and passionate Chef Riley Sanders from Canvas, a one MICHELIN Star restaurant from the MICHELIN Guide Thailand 2024, known for his unique ingredient sourcing and culinary creativity. Joining him is Chef Tanai “O” Photari of Tang Jai Yang, a Bib Gourmand awarded restaurant, a seasoned Thai chef and restaurateur dedicated to discovering new recipes within local communities.
The duo takes you on a journey to explore and get acquainted with Thai white sea cucumber, currently being supported for Geographic Indication (GI) registration and is a product of the natural richness and potential of Ko Pu's sea cucumber farming community supported by the Pracharath Rak Samakkee (PRS) Social Enterprise Network cooperative by ThaiBev. The initiative operates within the community-based tourism enterprise aiming to drive economic development, reduce inequality, create income opportunities, and fortify the local economy, fostering sustainable economic resilience at the community and national levels.
Both skillful chefs will showcase the culinary potential of the white sea cucumber, a source of pride and income for the Ko Pu fishermen community, and discuss how this valuable ingredient can be transformed into exceptional dishes. Can they take on the cooking challenge and bring smiles to the faces of the community members who harvest these precious treasures from the rich Andaman Sea?
