MICHELIN Guide Hong Kong Macau 2020 Selection

In the 12th edition of the Hong Kong Macau guide, 16 restaurants receive new stars, including 2 new three-starred restaurants, 3 new two-starred restaurants, and 11 new one-starred restaurants.

Michelin today unveiled its full selection for the MICHELIN Guide Hong Kong Macau 2020, featuring a total of 254 eateries and 52 lodging establishments across the two territories.

Among the 16 restaurants that received new stars in the 2020 edition are 2 new three-star restaurants, 3 new two-star restaurants and 11 new one-star restaurants. The 12th edition of the guide to Hong Kong and Macau recognises a total of 70 starred restaurants in Hong Kong and 20 starred restaurants in Macau.

“This year’s selections are testament to Hong Kong and Macau’s unwavering position as benchmark cities in the gastronomic world, where tradition and modernity can co-exist in a dynamic and delicious blend of authenticity and ambitious innovation,” said Gwendal Poullennec, the International Director of MICHELIN Guides. “As one of the earliest Asian destinations featured in the MICHELIN Guide since 2009, Hong Kong and Macau continue to delight local foodies, inspectors, tourists and business travellers alike with exciting new openings alongside relentless improvements by established names, across the entire culinary spectrum from street food to fine-dining.”

The numerous star additions this year are testament to the high level of talent in Hong Kong and Macau, and their creativity and passion for gastronomy. As a whole, the 2020 selection illustrates the cities’ unique combination of culturally diverse modernity and deep-rooted Cantonese and Macanese culinary heritage.

New to the three-star category are Forum, whose signature dish, the Ah Yat braised abalone, has become as famous as Forum’s owner-chef Yeung Koon Yat after whom it is named. The tender and flavoursome abalone is braised for days and its widespread repute draws global gourmands to Hong Kong just for a taste of it.

Also clinching the coveted three stars is Sushi Shikon, which continues to deliver first-rate food made with the finest skills after the sushi-ya’s relocation from Sheung Wan to a prestigious new space in the Landmark Mandarin Oriental in 2019. The intimate new space features detailed designs by Japan’s top designers and artisans, including the karatsu dinnerware handmade according to tradition.

With these new distinctions, Hong Kong now has 7 restaurants recognised with the MICHELIN Guide’s highest accolade of three stars, including Caprice, L'Atelier de Joël Robuchon, Lung King Heen, 8½ Otto e Mezzo - Bombana and T’ang Court. In Macau, all 3 three-starred restaurants, which are Jade Dragon, Robuchon au Dôme and The Eight have retained their ratings from last year.

The 2020 selection is further enriched by 3 new two-star additions (1 in Hong Kong and 2 in Macau). Contemporary French restaurant Arbor continues its meteoric rise with a promotion to two stars this year, after debuting on the guide with one star last year. In a calming space overlooking the bustle of Hong Kong’s Central district, Finnish chef Eric Räty employs French culinary techniques on mostly Japanese ingredients to deliver intense natural flavours with Nordic precision and sophistication.

Making its first entry onto the selection this year with two stars is Sichuan Moon in Macau’s Wynn Palace, a modern Sichuan restaurant fronted by Taiwanese chef André Chiang and run by Malaysian Executive chef Zor Tan. Tan’s tasting menu challenges pre-conceptions about Sichuan food with dishes that qualify as works of art.

Over in Wynn Macau, Cantonese fine-dining restaurant Wing Lei, which had one star in last year’s selection, gains a second star this year under the steady leadership of Cantonese chef Chan Tak Kwong, who has been with the restaurant since its pre-opening in 2006. With this new addition, Macau now has seven two-starred establishments in total.

The MICHELIN Guide Hong Kong Macau 2020 also recognises 61 one-star establishments, including 11 new additions in Hong Kong. These new establishments reflect the city’s gastronomic vibrancy by offering Cantonese, Shanghainese, Thai, Japanese and French cooking at exceptional standards.

Both helmed by Japanese chefs, Ryota Kappou Modern offers seasonal Japanese kappo-style menus and Zest by Konishi serves contemporary French cuisine using French and Japanese ingredients. Cantonese restaurant Rùn prepares traditional recipes with modern refinement.

New openings under the watch of seasoned chefs, such as Roganic by UK chef Simon Rogan, contemporary French restaurant Louise by Julien Royer, modern Thai venue Aaharn by David Thompson and L’Envol at the new St Regis Hong Kong by Olivier Elzer deliver exceptional world-class dining experiences.

Meanwhile, long-standing Hong Kong dining institutions such as French restaurants Gaddi’s and Petrus, Cantonese favourite Fook Lam Moon (Wan Chai) and Shanghainese Liu Yuan Pavilion impressed MICHELIN inspectors this year with their constant push for excellence.

Along with the star-rated restaurants, the 2020 selection includes 65 Bib Gourmand restaurants in Hong Kong and 7 in Macau, which are venues that offer three courses (drinks not included) for a maximum price of 400 Hong Kong dollars (in Hong Kong) or 400 Pataca de Macau (in Macau). The three new entrants to the 2020 Bib Gourmand selection are: She Wong Leung, a snake soup specialist that offers different seasonal herbal broths; bistro-style Cornerstone by Australian chef Shane Osborn of one-starred Arcane; and casual Cantonese eatery Hop Sze.

The MICHELIN Guide Hong Kong Macau 2020 also recognises 30 street food addresses in Hong Kong and Macau and a total of 93 restaurants with the MICHELIN Plate distinction, a category established in 2016 to highlight eateries whose cuisines meet the requisite high quality for inclusion.

  • 7 Bib Gourmand restaurants
