米其林指南的觀點

The name comes from keywords from the Showa era: Kyojin (“the Giants”), Taiho (a sumo champion) and tamagoyaki (the post-war rolled omelette), the desire being to become a restaurant popular with the broad public. The menu is wide-ranging, from ramen to Sichuan cuisine. The second-generation owner-chef also learned from Western chefs and there are creative dishes, such as where the method for preparing paella stock is applied.
