Owner-chef Norio Yamamoto named his restaurant ‘breath’ because his cuisine breathes life into each ingredient. Enchanted by the charcoal fire, Yamamoto advocates his own style of sumibi-kappo, ‘charcoal-fired cuisine.’ Ingredients of both pasture and sea, including wagyu and awabi, as well as vegetables sourced in Kyoto, are artfully cooked over flame. The admixture of caviar and truffles to Japanese cuisine highlights his familiarity with Western gourmet traditions.
