Sit at the counter and you can chat with the friendly owner-chef. He works on the principle of keeping the variety of ingredients per plate to a minimum, so as to convey each ingredient's appeal. First on the list is the velvety goma-dofu, and the renowned sabazushi is also highly recommended, as is the chub mackerel sushi speciality; from autumn to spring it is rolled in pickled sliced radishes, and in other seasons shiroita kombu is substituted.
