Wine And Dine At Matter Of Taste 2018

This year’s dinner packages feature a multi-course meal at a Michelin-starred restaurant and unlimited wine tastings at one great price.

Imagine indulging in a lavish eight-course dinner at one-Michelin-starred Summer Palace accompanied by the best-rated wines from Oregon. The next day, sip and swirl at a five-hour unlimited wine tasting session with more than 250 prestigious wines rated 90 Robert Parker points and above.

This and other dinner packages are available as part of Robert Parker Wine Advocate’s signature wine event of the year, Matter Of Taste. The Grand Finale Dinner will be held on 25 August at the Royal Pavilion Ballroom in Regent Singapore, A Four Seasons Hotel, following the five-hour unlimited Walkabout Tasting session, which takes place from 12pm.

This year, Matter of Taste Singapore will play host to six exclusive Wine Tasting Masterclasses conducted by established winemakers and wine reviewers from the Wine Advocate, Joe Czerwinski and Erin Brooks, as well as three exclusive wine dinners.

For one ticketed price, gourmands can also choose from three dinner packages which are inclusive of the Walkabout Tasting ticket worth $138 and a one-year subscription to Robert Parker Wine Advocate worth US$99.

On 24 August, the Oregon Red Gold dinner at one-Michelin-starred Summer Palace will see wine reviewer Erin Brooks introduce some of Oregon’s best-rated red wines to go with chef Liu Ching Hai’s refined Cantonese dishes. The eight-course menu with dishes of smoked duck and caviar, baked stuffed crab and stir-fried cubes of beef tenderloin will be accompanied by the likes of 2014 Cristom Vineyards Pinot Noir Marjorie Vineyard (RP 96) and 2014 Rasa Vineyards Merlot En Passant (RP 95).

“To create a memorable dining experience, it is important to introduce a balance of flavours and textures, and that was what I was hoping to create with the dishes; the wines enhance the flavours, allowing the various notes to blossom on the palate,” says Liu. One of the highlights of the menu is the starter of Chilled Live Prawns And Fresh Fruit With Crispy Charcoal Croissant. “When paired with the wine, the house-made fruit sauce with its sweetness and tartness helps to bring out notes of a different dimension from the wine. The crisp texture of the dough fritter and the light aroma from the wine deliver a multi-sensorial experience of flavours and textures.”

Over at the Paterson Room on the same night, wine reviewer Joe Czerwinski will take diners on a journey through Châteauneuf du Pape, California and Spain, pairing some of the best Grenache in the world with chef Angelo Ciccone’s flavourful Mediterranean cuisine in the Grail Of Grenache dinner. Coming from a family of winemakers himself, Ciccone has created a menu that is a marriage of food and wine.
“I personally love the 2006 Clarendon Hills Grenache Old Vines Romas Vineyard (RP 99) with its lovely nose of orange, violets and black cherries, tones of white pepper and lavender, rich and gorgeous with a crisp acid backbone and a long finish,” he says. “This wine will be extraordinary together with my Sous Vide Braised Wagyu Beef Cheek With Smoked Pumpkin Mousseline And Asparagus.”

Other star bottles include the 2013 Yangarra Estate Vineyard Grenache High Sands (RP 97+) and 2015 Domaine Ferrando Chateauneuf du Pape Colombis (RP 96). These are set to pair wonderfully with Ciccone’s creations conjured up from specially sourced produce. Think Putignano Burratina with Norcia black truffles, apple wood-smoked Norwegian wild salmon with Sevruga caviar and Sardinian-style lamb chops with artichokes, all rounded off with Ciccone’s latest creation: a Gorgonzola cheese with chuao dark chocolate, served with house-made organic truffle honey.

The Grand Finale dinner will be held at Regent Singapore’s Royal Pavilion Ballroom after the Walkabout Tasting on 25 August. The dinner, which was held with great success last year, offers guests the opportunity to rub shoulders and enjoy outstanding bottles with some of the world’s best winemakers, wine critics and importers. This dinner is a celebration of the finest wines and will be free seating, allowing all guests to share bottles and stories over a good dinner and an amazing array of 14 dishes.

Tables will be laden with a Mediterranean feast of Sicilian seafood salad, charcuterie, roasted Puglia artichokes with sun-dried tomatoes, slow-braised Wagyu cheek, herb-roasted sea bass and a selection of Italian cheeses — all to be enjoyed with good wine and great conversation.
