For Olvera, cooking was something he's always loved. From identifying ingredients to finding his own culinary language, being a chef has always boiled down to one thing for the award winner—his love of cooking for others.
That reason is why Olvera believes in training the next generation to share his knowledge, work philosophy, and ethics. Below, the mentor chef award winner takes us behind the scenes on his culinary journey.
What inspired you to become a chef?
Since I was little, I've always loved cooking, so becoming a chef was, in a way, very natural.
How has your relationship with cooking changed as you progressed with your career?
Over time, one becomes better at identifying what they are looking for and finding their own culinary language. In my case, I lean more towards simplicity today.
How important is it to train the next generation of cooks/culinary talents? Why?
I believe that it’s important to share knowledge and values, including work philosophy and ethics.

What do you have for breakfast?
Coffee, yogurt, honey, and nuts.
How would you describe Mexico’s food scene?
It has remarkable dynamism and vitality, offering extraordinary gastronomy and exciting exchange of ideas around the culinary scene.
Do you cook at home, or do you leave work at work?
I try to cook at home when I have time. I enjoy cooking for others.
Favorite food-related show, book, program, etc?
It's difficult to talk about just one favorite book or program, but recently, I've really enjoyed 'EAT' by Nigel Slater.
