Chefs rarely get a moment out of the kitchen, but last night at Genesis House — the haute Korean boîte celebrating culture and cuisine — a dynamic group of New York’s top talents converged to celebrate International Women’s Month. Angie Mar of Le B, Camari Mick and Mary Attea of Musket Room and Raf’s, and Emma Bengtsson of Aquavit mingled and nibbled on bites while master sommeliers Pascaline Lepeltier and Mia Van de Water of Cote joined by Sarah Gallegos of Corkbuzz sampled the cocktails. Punctuating the space were elegant cocoji floral arrangements in shades of green, white, and purple highlighting the precise refinement that would translate to the plate.
After remarks from Rachel Espersen of Genesis welcoming everyone, it was time for dinner. Taking their seats were Niki Russ Federman (the fourth generation owner of Russ & Daughters), pastry chefs Ashley Drum of abcV and Kelly Nam, and Ahris Kim of Na: Eun Hospitality (they’re behind Atomix, Atoboy, Naro). As the elegant first course was served — Jeonbokchae dusted with ossetra caviar and a hint of gold — the conversation flowed focused on gender equity in the industry and what can be done to provide greater opportunity to females.
However, as the evening progressed and chef Losa Yi’s mesmerizing plates dazzled diners, the chatter turned toward inspiration, honoring tradition, and innovating with intention. And as dessert, Bam Pyeon comprised of a chestnut financier, coffee vanilla ice cream, and a warm cinnamon anglaise, was brought out, the night concluded with smiles, new friendships, and a determination to create more forums and spaces to share.
