MICHELIN Inspector Field Notes: December 2019

Highlights of the latest thoughts from our MICHELIN inspectors.

Inspectors

It's time to peel back the curtain a bit to give you some insight into what's going through the minds of our famously anonymous inspectors. The easiest way to do that? Following one of their Twitter accounts (Chicago, New York or California) or staying up to date with their latest Instagram posts. And yes, these are real inspectors sharing their personal thoughts.

That sounds like some good hospitality.

It's the little things that count.

Sometimes our inspectors just want a nice cocktail bar to balance out all of the eating.

Would you eat a soup-only tasting menu?

Look at all of that beautiful uni!

#Uni atop black truffle atop a tiny round of toasted brioche. Creamy, crunchy, sweet, and salt\u2014everything in one fine bite. It was love at first sight at #ChefsTableAtBrooklynFare, which received #ThreeMichelinStars in the #2012 #michelinguideny #CesarRamirez #inspectorfavesofthedecade

It's rare to find a cocktail bar that's comfy, intimate & not overwhelmingly loud. Battling the week (and weather) @Raineslawroom

The colder it gets, the more I wish somebody would put together a hot #soup tasting menu #foodforthought

Also, our inspectors shared some of their favorites from the decade, like the foie gras and lychee dish from Ko.

To end the year, we will be reflecting on an astounding decade of dining at some of our most iconic restaurants #inspectorfavesofthedecade. First up, the sole surviving #TwoMichelinStars from the #2010 #michelinguideny #MomofukuKo. Frozen #foiegrastorchon with #lychee, Riesling gel\u00e9e and pine nut brittle will remain forever beguiling @ko_ep @momolongplay @davidchang
