This ryotei stands close to Shimogamo Shrine, a World Heritage site. Yoshimi Tanigawa, the owner-chef, describes his art as “a quest for good flavour”, while the cup of sake that starts the meal conveys his spirit of hospitality. The choice of Ma-kombu for the dashi is because of the well-rounded umami it imparts. The arrangements reflect current festivals and the season, from an aesthetic sensibility tutored in the arts of tea ceremony and flower arranging.
