Owner-chef Hiroki Abe constantly researching new ideas in gastronomy and incorporates Western ingredients and cooking methods. His hassun platters are a thing of beauty. In his careful considering of the affinity between ingredients, and his adding of flavours one on top of the other, he creates a unique culinary style.
