What to Eat at the 6 New MICHELIN Selected Restaurants in Singapore

6 restaurants in Singapore have newly entered the MICHELIN Guide Singapore 2022 selection. Planning to drop by? Here's what that stood out according to our inspectors.

With the MICHELIN Guide Singapore 2022 edition announced on 12 July 2022, 6 new restaurants in Singapore entered the selection. MICHELIN-selected restaurants have neither been awarded a star nor a Bib Gourmand, but are recognised for having very good food. 

In the MICHELIN Guide Singapore 2022 selection, there are a total of 62 restaurants that have been selected, 6 of which are new. Here's what impressed our Michelin inspectors.

What The Inspectors Say: From chef Julien Royer of Odette fame comes a classic French brasserie, which he named after his mother. It’s housed in a lovely 1930s converted chapel, with an open kitchen at one end and a bar at the other. Those with a fondness for comforting French classics will find the roll-call of favourites very appealing, from onion soup to vol-au-vents and baba au rhum. If you’re willing to share, then go for the bouillabaisse or the pepper steak flambéed at your table.

What The Inspectors Say: Its name is a pun on how cooking revolves around the charcoal grill, brazier, and tandoor. Whether you sit at the counter or in a booth, the chefs put on a show that is visible from all seats. Two tasting menus and a vegetarian menu are offered. Dishes are rooted in different regions of India, but are reimagined and reborn over coals and fire. The distinctive smoky flavour and layering of spices works magic, resulting in a delicate balance.

What The Inspectors Say: The iconic Bar & Billiard Room (BBR) in Raffles Hotel is now home to Chef Alain Ducasse’s dining concept with an Italian Riviera theme. The open kitchen at the centre of the bright and airy room is surrounded by counter seats, perfect for those who want to stay close to the action. Start your meal with an Italian-inspired cocktail and order pasta or fish for the main course, or try the curated Menu Tentazioni for the entire table.

What The Inspectors Say:
 This intimate little gem serves multi-course omakase menus showcasing top-quality A5 Wagyu beef from different prefectures of Japan, prepared as sushi, sandwich, sukiyaki, and teppanyaki. In between beef courses, seafood ranging from uni and crab, to abalone and scampi, is served for a varied and interesting experience. There is also an à la carte add-on menu for you to personalise your meal with additional beef or fish.

What The Inspectors Say: Wood-fire cooking is the speciality of this dark and handsome restaurant within Raffles Hotel. Head straight to the "Tour de Force" multi-course menu if you want to experience a variety of top-quality fish and meat dishes, all expertly prepared using American wood and supplemented with Asian flavours. The moodily lit room ensures your gaze never wanders too far from the open kitchen. A restaurant to appeal to the hunter-gatherer in all of us.

What The Inspectors Say: This omakase sushi-ya with only 12 seats boasts a counter crafted from a 250-year-old hinoki tree. In stark contrast, the lively lounge for tea and dessert is clad in wallpaper with dancing cranes on a pink background. The freshest fish is creatively combined with other ingredients to great effects while the well thought-out, sometimes unorthodox, seasoning on the sushi makes the experience unique. Friendly chefs are happy to interact with diners.
