The sushi rice is seasoned with akazu and salt, for a harmonious balance of sour and sweet. The invigorating spiciness of the finely grated wasabi between rice and topping is one of the grace notes here. The chef varies the firmness with which he moulds the rice according to the type of fish, striving for flavour that fills the mouth with every bite. Gizzard shad, nihamaguri and tubular omelette served at the end are all works of classic sushi artistry.
