Live Update: New Restaurants in the MICHELIN Guide – December 2021

The MICHELIN Guide Inspectors reveal some more additions to this year’s Great Britain & Ireland Guide

Once again, it’s time to announce some more new additions to the MICHELIN Guide Great Britain & Ireland. This announcement comes ahead of the annual launch ceremony, when the new Michelin Stars, Bib Gourmands and Green Stars will be unveiled.

For our fifth live release we’re releasing details of thirty new restaurants to be featured in the guide. These appear on both the website and the iOS and Android apps and are highlighted with a ‘New’ symbol for easy identification.

Here are details of five of the MICHELIN inspectors’ favourite new restaurants:

SY23

Aberystwyth

Chef-owner Nathan Davies is an Ynyshir alumnus, and its influence is clear to see here. Start with a drink in the bar before heading upstairs to the moody, intimately lit restaurant where the atmosphere is lively, the colour scheme makes a statement, and the open kitchen takes centre stage. Foraging, pickling and fermenting all play their part on the set nine course menu; the charcoal grill is used to good effect and the deceptively simple looking dishes are modern and original with real depth of flavour.

Leith

After a short time working on their ‘Bad Seeds’ delivery project, two young chefs, Tomás and Sam, opened their first permanent restaurant in a great spot near Leith Shore. Cool, modern furnishings sit beneath an ornate period ceiling, there’s a great soundtrack, and floor-to-ceiling windows make the most of the view. Confidently prepared dishes follow a less-is-more approach and flavour combinations are stunning.

Meadowsweet

The former Head Chef of Morston Hall and his partner Rebecca – a natural host – are going it alone at this truly charming restaurant in an old Georgian building which they have lovingly restored. The finest local produce is delivered via a skilfully prepared tasting menu where deep flavours come together perfectly and no detail is overlooked – and the team of chefs present and explain the dishes personally. Three restful bedrooms provide the perfect escape.

Big Fan

Dublin

Dublin’s dining scene offers cuisine from every corner of the world, but the hottest ticket in town right now is this friendly spot on Aungier Street. With its colourful décor, bright lights and lively atmosphere, Big Fan is Big Fun, so start with a cocktail, tick plenty of dishes on the list on your table, tuck in and enjoy. Small sharing plates take their influences from China and Taiwan; expect dumplings, bao buns, Xiao Chi – and some tasty desserts too.

Bibi

Mayfair - London

For many people, sitting at a restaurant counter watching the chefs do their thing is one of the joys of eating out. Now they can add Indian cuisine to the array of appealing counters in London. Chef Chet Sharma opened the very handsome Bibi in partnership with JKS Restaurants, the brains behind such lodestars as Gymkhana and Trishna, so you know it’s going to be well run. Chaat and grills are the specialities and, to get in the mood, start things off by ordering a Monsoon Martini.
