On the edge of a RSPB nature reserve in rural Wales, you’ll find this handsome part-Georgian country house with chic bedrooms, an intimate, Scandic-style restaurant and a laid-back vibe; start your night with a drink on sheepskin-covered chairs in the rustic bar while enjoying mellow tunes from the DJ.

Chef Gareth Ward is truly passionate about meat, handling it with knowledge and reverence; he buys whole Welsh Wagyu beef and matures it himself, with digital counters telling the time it’s been aged – some for over 200 days. His multi-course set menus are served as a series of vibrant mouthfuls which really pack a punch and, while ingredients are mainly Welsh, dishes feature an array of Asian flavours. The chefs deliver the dishes themselves, explaining both the ingredients and how they were prepared.
