The Breakfast Club: 7 Spots for Pancakes

Because nothing says "the weekend" better than a stack of fluffy pancakes.

Call them pancakes, hotcakes, flapjacks, griddlecakes or whatever you please. Because apart from their numerous monikers, they remain largely the same. A good pancake is light and fluffy, topped with knob of butter and holds up well against a drizzle of syrup - maple, golden, chocolate or butterscotch, your pick.

But with brunch and breakfast spots a dime a dozen these days, how do you decide on exactly where to go for a nice stack of cakes hot off the griddle? Here are seven spots we visit when we're craving a plate of the breakfast staple.
1. Clinton St. Baking Company
31 Purvis Street
Opening hours: 8am to 9pm, daily

Here's one for the pancake purists. Serving up all-day breakfast with a decidedly Southern flair is the American Clinton St. Baking Company. They may be located on Purvis Street here but we’re told that the food tastes just the same. Keeping things good and simple, they've got Pancakes with Warm Maple Butter ($19) that comes with a selection of toppings: blueberries, banana walnut or chocolate chunks.

2. Crackerjack

43 Tanjong Pagar Road
Opening hours: 9am to midnight, Mon to Fri. 10am to midnight, Sat. 10am to 4pm, Sun.

Who knew casual cocktail bar Crackerjack would be serving up decent vegan pancakes for brunch? Their almond and cinnamon Horchata Pancakes ($11) come with an almond praline and cinnamon whipped cream. For the carnivore version, opt for some bacon at an extra $4.

3. Populous Café
146 Neil Road
Opening hours: 9am to 7pm, Mon. 9am to 4pm, Tues. 9am to 10.30pm, Wed to Fri. 9.30am to 10.30pm, Sat. 9.30pm to 7pm, Sun.

This pancake from popular brunch outpost Populous Cafe is crispy on the outside and fluffy on the inside. The Buckwheat Pancake ($18.50) is almost savoury in nature thanks to its use of buckwheat flour but when paired together with a berry compote, passionfruit curd and a cornflake crumb, it makes for quite a sweet breakfast treat.

4. The Coffee Academics
Scotts Square, Level 2, 6 Scotts Road
Opening hours: 9am to 10pm Mon-Thurs, 9am to 10.30pm Friday & Saturday, 9am to 9.30pm on Sundays.

Taking fluffy to a whole other dimension is the Academic Pancake Tower ($20) from The Coffee Academics. A stack of three truly fluffy, airy pancakes served with a berry sorbet, mixed berries and whipped cream is what you get. Need we say more?

5. Curious Palette

64 Prinsep Street
Opening hours: 9am to 10pm, Mon, Wed, Thurs & Sun. 9am to midnight, Fri & Sat. Closed on Tuesdays

Opened by the same people who brought us Stranger’s Reunion, Curious Palette does a mean breakfast. But what we’re really after is their Berry Ricotta Hotcake ($14.90; $15.90 for the bacon version) that comes topped with a mound of fresh berries, pumpkin seeds, sunflower seeds and vanilla bean ice cream.

6. Atlas Coffeehouse
6 Duke’s Road
Opening hours: 8am to 7pm, Tues to Sun. Closed on Mondays

Here’s a café that doesn’t punish you for sleeping in on the weekends. Atlas Coffeehouse serves up an all-day brunch. Their Butterscotch Banana Pancakes ($18.50) requires a 15-minute wait but we promise it’s worth it.

7. PUNCH
32 North Canal Road
Opening hours: 8am to 6pm, Tues to Sun. Closed on Mondays

From the guys who brought us the tremendously popular but now-defunct The Plain and ultra-cool coffee joint RONIN, we now have PUNCH. A classy outpost on North Canal Road that serves up exceptional nosh. Their Earl Grey Pancakes ($16) deserves a mention. Tea-infused pancake stack with a white chocolate macadamia crumble and half a chocolate-dipped poached pear. It’s a step up from flapjacks as we know it.
