‘Ramen is a musical ensemble in a bowl’ is something only someone like former rock-band member, and current owner-chef, Genki Okumura would say. In place of drumsticks, chopsticks beat out the rhythm in his steaming bowls of soup with homemade noodles. Flavour, taste and trailing notes each play to their own rhythm. In the soy sauce-flavoured ramen, the sweetness of wheat that exudes from the noodles and the changing temperature of the soup continuously modulate the experience.
