Hélène Darroze — Hélène Darroze boasts a total of 6 Michelin stars across three renowned restaurants: Hélène Darroze at The Connaught in London with Three MICHELIN Stars, Marsan par Hélène Darroze in Paris with Two MICHELIN Stars, and Hélène Darroze à Villa La Coste in Provence with One MICHELIN Star. Recently, she has departed from the familiarity of European kitchens, where her expertise is undisputed, and embarked on a culinary journey to Africa at La Grande Table Marocaine. Not only is she exploring a different cuisine, but she's doing so within the prestigious setting of The Royal Mansour, founded by Morocco’s King Mohammed VI as a personal passion project. This opulent establishment consists entirely of multistory riads as guestrooms. In addition to this, she is succeeding the legendary Yannick Alléno, who holds an impressive 12 Michelin Stars himself, and who held the position at the property for the prior twelve years. Darroze's new venture and her illustrious pedigree demonstrate her unwavering determination to rise among the most celebrated female chefs in the world. When offering advice to aspiring chefs, Darroze suggests, “Stay yourself, never try to play a role. To succeed is to be in agreement with yourself, to do things with passion and not with reason.”

"I was first drawn to the creativity of cooking and the hospitality involved in a restaurant, but the economics of running a business are such an important aspect as well. Particularly now as we face new challenges industry wide, I would encourage anyone who wants to follow this path to take a holistic approach and spend as much time as you can understanding all of the operation. This is not just about culinary expertise, but also leadership. It's not enough just to follow that path that you love, you have to build a team that is good at it also." - Nancy Oakes
