SumiLicious Ups the Ante on the Humble Sandwich

The Toronto deli dazzles diners with its Montreal-style smoked meats at a great price.

Tucked away in the Toronto suburb of Scarborough, MICHELIN Bib Gourmand SumiLicious introduces classic Montreal smoked meats to a fresh new audience. Chef Sumith Fernando honed his culinary craft during his 17 years at Montreal’s famous Schwartz’s Deli. He grins, “I got lots of hands-on experience every day. Starting at the bottom to way up.”

To accompany its meat, SumiLicious also offers a tasty Canadian classic: poutine. Chef Fernando explains, “For the smoked meat poutine, we use freshly cut potatoes seasoned with our spices, cheese curds and gravy topped with chopped smoked meat.”

What is the dish to order at SumiLicious?

Smoked Meat sandwich, medium is our signature. We use the beef brisket, marinated with a dry rub of spices for about ten days, smoked for over eight hours and steamed for over three hours.

What was the idea behind SumiLicious?

I wanted to bring authentic Montreal style smoked meat to the Greater Toronto Area. Montreal is popular for its smoked meat for its authenticity and flavour. Most people say Montreal style smoked meat is the best. I also agree. While I was working at the deli in Montreal, I saw most people shake their head after the first bite. I enjoy seeing people happy, shaking their heads after the first bite. It inspired me to try making it my own, to see the same from my customers one day.

What is your goal with SumiLicious?

To maintain the quality in control, keep its consistency and to serve quality food to all communities in the Greater Toronto Area.

How would you describe your approach to food and cooking?

When I taste a flavor, I like to try it out. I always like to try out new recipes and experiment with new ingredients.
