Chef Shusaku Toba has led quite a life – as a J-League trainee, a faculty member of a primary school and then, at the age of 32, setting out to become a chef. The name of the restaurant comes from the Japanese word for ‘salt’, an ingredient he sets great store by. His dishes are based on French and Italian cuisine but are not confined to any particular genre. What determines the flavour is his beloved salt.
