                        After stints in respected MICHELIN-starred kitchens in Switzerland and Chantilly, Alain Montigny (Meilleur Ouvrier de France 2004) is now the chef at the exquisite Tiara Miramar Beach Resort, the terrace of which commands a jaw-dropping view of the sea and the mountains of the Massif de l'Estérel. His delicious Mediterranean-inspired dishes are balanced and delicately flavoured thanks to top-quality ingredients. Superb craftsmanship is evident in his roasted langoustine with beetroot tartare and raspberry condiment, and his line-caught turbot with lemon-marinated courgette and sheep's-milk cheese.
