The owner-chef uses the same brand of chicken from Fukushima prefecture as his mentor under whom he apprenticed; the ‘strong heat from a close flame’, fed using kishu-binchotan, is a cooking technique he also learnt. The oyako ‘mother-and-child’ bowl of chicken and egg stands out for having raw egg over the rice as well as cooked egg mixed in. The mince-meat soboro bowl is skilfully given a smoked aroma. It’s located in a merchant-style townhouse.
