米其林指南的觀點

The owner-chef selects buckwheat according to that year's harvest. He slowly grinds it on a stone mortar so as not to heat up the stones, thus retaining its aroma. To prioritise their texture, the noodles use 100% buckwheat flour and are cut thin. In the evening, soba made from coarse buckwheat flour is also served. Enjoy both types of soba by choosing the ‘Nishokumori’. The selection of shuko includes anago nikogori, shrimp and vegetable tempura, and kamoyaki.
