"A commitment to human development and respect for the environment are at the heart of our approach. The market garden produce that we cook comes mainly from the Île-de-France region, the meat and fish come from responsible and sustainable farming and fishing, we use produce in its entirety to combat waste, and our bio-waste goes to a vermicomposting centre to be recycled."
