The full list of restaurants to be recommended within the MICHELIN Guide Taipei, Taichung, Tainan & Kaohsiung 2022 has just been announced. For the first time, the MICHELIN inspectors have extended their research to Tainan and Kaohsiung.
Including the Starred, Bib Gourmand, and selected restaurants, the full 2022 restaurant selection of the MICHELIN Guide features a total of 170 eateries in Taipei, 68 in Taichung, 44 in Tainan, and 39 in Kaohsiung.
5 new restaurants are awarded One MICHELIN Star in Taipei( (including 2 newly selected and 3 promoted), while 2 Kaohsiung restaurants enter the selection for the first time with One MICHELIN Star.

MICHELIN Guide’s Point Of View: The phone book-like menu may be a bit intimidating, but you’re never more than a flip away from familiar and much-loved dishes from the group’s flagship outlets. A branch serves the brand’s greatest hits from the past 40 years, along with new creations and hidden items previously only familiar for those in the know. Dishes such as shiso leaf oyster fritters, and dried radish fried rice are simply unmissable.

MICHELIN Guide’s Point Of View: This renowned kappo restaurant moved to this address in 2021; it has a minimalist look with light wood and a slate grey palette. It now boasts five private rooms, the largest one seating 20. There is only one omakase menu for lunch and one for dinner, featuring fish from Yilan County and seasonal produce from Japan. The kamameshi course following the main is always a highlight, using ingredients such as unagi or Hiroshima oysters.

MICHELIN Guide’s Point Of View: The show kitchen takes centre stage in a minimalistic room sporting warm lighting and a centrepiece made of dried flowers and branches. Having honed his skills in some prestigious French and Japanese establishments and thanks to his time spent in Taiwan, the Canadian head chef excels in preparing local ingredients with classic European techniques and subtle Japanese twists, delivering refined flavours and elegant plating. MICHELIN Guide’s Point Of View: Seafood is very much the focus at this elegantly dressed restaurant, whose muted décor and quality tableware exude comfort and luxury. In line with executive chef Takayama-san’s refined French-Japanese culinary vision, the Japanese head chef cleverly incorporates local tea and produce into his cooking. A meal here is not only a gustatory and visual experience, but also involves the senses of hearing, touch and smell, perfect for romantic dates.

MICHELIN Guide’s Point Of View: Helmed by Chef Hashimoto, the third overseas outpost of the famous Osaka-based sushiya offers omakase menus that meld Edomae sushi traditions and creative use of Western techniques and ingredients, such as truffle and caviar. While nigiri sushi dominates the lunch menus, the higher priced dinner menu is where the chef’s culinary vision shines in full glory – each course is crafted like art pieces presented in a fun-filled manner.

MICHELIN Guide’s Point Of View: The mostly white space features clean lines and an open kitchen framed by arc-shaped concrete counters. The Japanese chef closed his famed restaurant in Tokyo to resurrect his vision here. Meticulously executed French dishes are enlivened by his personal twists, local and Japanese influences, layers of flavours and textures. The 10-course prix-fixe menu embodies the changes of the seasons with dishes like consommé in puff pastry crust.

MICHELIN Guide’s Point Of View: The first outpost of the Tokyo famed restaurant Den outside of Japan, Sho has been on gourmets’ radar since it opened in 2020. The head chef, from Kyushu, used to work at Den and his creations combine classic elegance with creative touches. Serving only one menu, which includes two signature dishes lifted from Den – a green salad made with 10+ veggies that have been fried, steamed, ground, or pickled; and kamameshi featuring local, seasonal produce.
