MICHELIN Guide’s Point Of View

This is the third overseas outpost of the famous Osaka-based sushiya. Instead of making conventional Edomae sushi, the Japanese chef strikes a fine balance between tradition and the use of creative Western touches, in signatures such as botan ebi carpaccio topped with shrimp tomalley ice cream and shaved black bottarga. Two omakase menus are available for lunch and dinner; the higher priced one lets diners experience the chef’s vision to the fullest.
