Michelin-starred Hong Kong Soya Sauce Chicken Rice & Noodle To Open Second Outlet and Expand Overseas

It's a joint collaboration with Hersing Culinary which is behind the global expansion of Tim Ho Wan and Tsuta.

Hong Kong Soya Sauce Chicken Rice & Noodle – the world’s first Michelin-starred hawker stall and also the cheapest has announced a collaboration with Hersing Culinary to expand into the quick service restaurant business.

The new space at 78 Smith Street in Chinatown will be named Hawker Chan, slated to be opened in the middle of November. Chef Chan Hon Meng’s signature dishes will be featured as well as several new recipes.

“The old hawker Chan’s stall will stay there and the prices will remain the same,” says Chan through a translator. “For the new stall, it will be about food court prices to be affordable for everyone.”

The Smith street location is a strategic choice as it’s near chef Chan’s original stall, letting him make frequent trips between the two eating spots.

The two partners also have an eye to global expansion. Hersing Culinary is after all, the firm behind Tim Ho Wan’s expansion across Asia and has recently brought in one-Michelin-starred ramen eatery Tsuta into Singapore.

“This being the first concept, we’ll have to test it for three to six months,” says Harry Chua, Hersing's executive chairman. “Tim Ho Wan took at least one year before we decided to move overseas."
