MICHELIN Guide’s Point Of View

Chef Bryce Bonsack's culinary background includes experience in cutting-edge kitchens in New York as well as training in regional Italian cooking (the name is an homage to the Piedmontese family that took him under their wing). He demonstrates both skill sets to great effect in this hip, of-the-moment eatery.
Naturally, there's an assortment of pastas, skillfully made in house, which showcase classic flavors and scrupulous technique, like supple tagliolini with beef ragù and 30-month-aged Parmigiano. Guests ooh and ahh over mozzarella hand pulled to order in a tableside cart, but the flavor outshines the show. Perhaps most exciting of all are the displays of originality, as in a vibrant hiramasa carpaccio with green apple, capers and horseradish.
