La Terrasse steps in at lunchtime and on Wednesday evening (when the 3-star La Vague d'Or is closed) as the restaurant of the Cheval Blanc Saint-Tropez Hotel. In the shade of umbrella pines, looking out over the bay of the Gulf of St Tropez, it serves Mediterranean cuisine with a clear Provençal slant, orchestrated by chef Arnaud Donckele and his team.
