Owner-chef Koichi Maekawa’s goal is to present a ryoriya (‘cookery’) that reflects his taste and personality, unfettered by hidebound tradition. Seasonal vegetables and herbs are prominent in his creations and many of his ideas spring from his experiences as a head chef in Gion. Intent on leaving each customer with happy memories of a fun meal, Maekawa brings his ingenuity to the cuisine with the panache and pride of a craftsman he learned from his mentor.
