Aged beef and organic wine are the signature offerings at this Italian restaurant. Owner-chef Jun Fujiwara’s love affair with beef began in Florence, when he was galvanized by a steak he had there. Fujiwara sources rump, aitchbone and rib roast from a butcher in his native Shiga Prefecture who specializes in aged beef. He seasons his beef with salt and pepper only and grills it over charcoal. A glass of wine nicely complements this simple cuisine.
