"We favour using seasonal produce from our two vegetable gardens and from our partnerships with local producers. The recipes make full use of the produce, both in the dishes and throughout our three kitchens. We remove organic waste into compost, limiting the production of methane, and we sort and recycle cardboard, plastic, paper, aluminium and glass. Egg crates and egg cartons re-used on a deposit system, used fat is reprocessed. Our lights are LED."
