Chef Ryo Sato respects the products and producers of Nara and has built relationships with the farmers that grow the vegetables and raise the chicken and pork he serves. Out of gratitude for nature’s bounty, he explains the dishes, painting a clear picture of the production area and the producers, including the scenery of where they were produced, the personality of the producer and the passion put into growing or raising them. He’ll even include an anecdote or two about them!
