The chirashi-zushi is as bright as a garden full of blossoms. The thin yellow strips of omelette cover it so extensively you can’t even see the seafood underneath. With doubt battling anticipation, you search the dish with your chopsticks, then your spirit leaps as you find it chock-full of hidden tai, squid, octopus, tuna and shrimp. The thick-cut ingredients are carefully selected for freshness and texture. No sugar is used; instead, salt is added to draw out the natural sweetness.
