Adega is Portuguese for “wine cellar,” and following suit, this exquisite dining room stocks over 200 vintages that are rarely seen on these Western shores. But that’s just the beginning for the team of David Costa and Pasty Chef Jessica Carreira, who elevate every course on this appetizing menu with a perfect blend of pristine local produce and top-notch, imported ingredients.

Seafood is a particular area of focus in this kitchen, and diners shouldn't miss the likes of a dressed-up take on Portugal's culinary backbone—that is, bacalhau, or salted cod. In this rendition, it is moist and flavorful, arranged over crisp potatoes, nubs of black olives, and a creamy cod sauce. Succulent carabineros (deep-sea scarlet-tinted prawns) are marinated in lemongrass and seaweed, before being topped with a briny contrast of caviar. And even those skeptical of blood sausage may well be converted by the outstanding morcela, which is wrapped in a pastry shell and served with a refreshing apple-celery sauce.

Chef Carreira’s desserts are equally notable—and delightful. Sample, for instance, the soft and quivering flan, layered with caramelized sugar and gilded with a quenelle of vanilla ice cream.
