Billed as a reinvention but what in reality was more a renovation, Alinea 2.0 is no longer a freewheeling circus of culinary showmanship. The entire space is now more subdued, with fewer stunts and minimal pomp. It offers maturity, substance, soul, and a level of infectious confidence unknown in its previous incarnation. This restaurant is more about you (the guest) than them (Chef Grant Achatz and his deeply talented team). Service, too, has never been more attentive and engaged, thanks to a staff who brings both humor and personality to the meal. The menu style has been completely revamped, so even the most frequent visitor will have some surprises in store. There are three seating options, each with its own menu. The Salon is the most modest with eleven courses, while the Gallery offers a few more dishes with copious bells and whistles. The third and most opulent is the Kitchen Table, where outright bacchanalia ensues for a price tag that will probably leave Nick Kokonas the only one smiling. (Actual prices vary according to the date and time of your pre-paid reservation.) Highlights are always whimsical, sometimes experimental, and may include scented vapors, smoke, and balloons.
