The chef now at the helm of this maritime-inspired restaurant, where she once trained with her father, is giving us her own modern take on family tradition. She likes to add good concentrated jus to her dishes (octopus with pork jus) as well as sweet-and-sour flavours (langoustine, turnip, almonds).
