This high-flying technical master chef buys his ingredients locally and his inventive streak is most noticeable in his vegetable recipes, thanks to his charcoal oven.
"I believe that sustainability is a question of daily commitment with no limit in time. It is about working conscientiously every day and thinking about ingredients holistically to appreciate them. This also implies respecting the people behind the ingredient: the producer and our teams, on whom we shine the spotlight. Our wasteful era is closely linked to the dehumanisation of our consumption methods. For me, sustainability is about humanity."
