Keisuke Nakamoto visited farms in Ohara looking for ingredients and was inspired by the efforts of farmers working in this region. This prompted his decision to open a restaurant in Kyoto. He studied various food cultures when working as head of the kitchen at a restaurant in Switzerland, and that has led to the originality he demonstrates today. His speciality is a dish of shrimp and beetroot, which uses fermentation to bring out ever new flavours in the ingredients.
