TAIWAN, 28 July 2021 – Michelin announces the Star selection of the MICHELIN Guide Taipei & Taichung 2021 to be officially revealed via a virtual event at 1:30 PM Taiwan Time on 25 August 2021, in consideration of the health measures taking place in Taiwan during the global Covid-19 pandemic.
The International Director of the MICHELIN Guides, Mr. Gwendal Poullennec, will make a special online appearance to reveal the restaurants selected in the new edition of the MICHELIN Guide Taipei & Taichung, in addition to the MICHELIN Guide Young Chef Award the MICHELIN Guide will introduce a new award, the MICHELIN Guide Service Award.
The MICHELIN Guide Young Chef Award presented once again by Audi Taiwan, is given to a young chef of a MICHELIN-starred restaurant with exceptional talent and great potential; while the MICHELIN Guide Service Award presented by Mortlach Single Malt Whisky, does not recognize a venue, but rather an individual who has shown exceptional service and hospitality skills.
In another first, the 2021 edition of the MICHELIN Guide Taipei & Taichung will also debut a brand-new distinction, the MICHELIN Green Star. This distinction, which was launched in France in January 2020 and implemented in several international editions of the MICHELIN Guide, aims to highlight role-model restaurants that outstandingly embody and embrace sustainability in their day-to-day operations, such as efforts in food waste reduction, recycling, the promotion of local and ethical ingredient sourcing, or many other virtuous and inspiring initiatives. These establishments are selected based on research and data collected from the MICHELIN Guide inspectors’ fieldwork.
Gwendal Poullennec, International Director of the MICHELIN Guides, says “Despite the ups and downs we have all been through in 2020 and part of 2021, the Taipei and Taichung restaurant community have demonstrated an incredible resilience and commitment to overcoming the obstacles and adapting their businesses with an unchanged passion, talent and innovation. In the 2021 edition, we pay tribute to the perseverance and dedication of these professionals, who continue to bring us together over the finest gastronomy and experiences. I believe the readers of the MICHELIN Guide and all food lovers are impatient to continue discovering Taipei and Taichung’s exciting and resilient dining scene, and indeed to also rediscover the scene of reinventions that have taken place over the last year.”
Of the new selection and the MICHELIN Green Star distinction, he adds: “Launching a brand new distinction dedicated to sustainable gastronomy shows that our recognition goes beyond the search for the best quality of food to also put the spotlight on those who do so with a great sense of responsibility towards the environment. And by unveiling our annual selection of restaurants, we also want to encourage all gourmets to safely rediscover the pleasure of great gastronomic experiences by recommending them the best of Taipei and Taichung culinary scenes.”

The full selection of MICHELIN Guide Taipei & Taichung 2021 will also be available on MICHELIN Guide’s official website and the MICHELIN Guide mobile app (iOS and Android) which enables anyone to find every restaurant and hotel in the world selected by the MICHELIN Guide.
In addition, the new Bib Gourmand selection for the MICHELIN Guide Taipei & Taichung 2021 which lists restaurants offering ‘good quality, good value cooking’, will be released on 11 August, two weeks prior to the MICHELIN Star Revelation digital ceremony . The selection criteria for Bib Gourmand and MICHELIN Stars adhere to a global standard where anonymous Michelin inspectors review all cuisines, and evaluate only the quality of the dishes.
All establishments are chosen according to the same five criteria used by Michelin inspectors around the world: quality of the ingredients used; mastery of cooking techniques; the harmony of the flavours; expression of the chef’s personality in the cuisine; and consistency, both over time and across the entire menu. Location, décor, service and available facilities are not part of the selection criteria .
